Not sure on the Southampton game, but the Watford incident happened while Watford were doing really well, Chelsea had gone in front and they are top of the league, Watford had managed to equalise and the momentum was with them. Watford were only promoted this year and are 17th so I’m guessing over excitement and exertion with age or underlying issue along with the shot?
