You can freeze fresh eggs. Take them out of the egg shell, place one egg per freezer bag. They are good for 6 months, frozen.
Look up water glassing. Unwashed fresh eggs direct from the hens can be put in a bucket of solution and kept for 8 months or more. I might have to do that. I don't have any more room in my freezers.
