I'm not talking about race, pretty much every Roman statue is just completely blank and some of them have barely visible eyes. Is there a reason why there are no colours and they're just completely white without colour?

Oh. They used to be painted, but that wore off.

I thought becyase they were carved out of marble, they were kept that way.
