As the supply of eggs becomes scarcer, so the time between laying and buying becomes shorter. (Less storage time.) So the eggs are fresher.
Fresh egg = firm yolk that doesn't break and splat when it hits the pan. Remains domed high above the white in the frying pan.
The absolute best way is to get a small bright flashlight and hold it to the shell
candling the egg looking at the air pocket.
The smaller the air pocket the fresher the egg.
