The globalists want a food crisis they can control which requires it be on their timeline. The Netherlands farmers are taking action because their government plans to eliminate them anyways which would also create a food crisis, just later on. The benefit of what the farmer's are doing is 3 fold:
As stated before, they are creating a crisis that the globalists can't control at a time the globalists didn't plan. You could argue that the globalists have anticipated this and are using it to their advantage. However, I tend to think they didn't because have been getting overly confident and brazen lately. I think they expected everyone to comply and not fight back like they did. And you can't blame the globalists for becoming overly confident. How many people willingly took an experimental vaccine that was not proven to be safe or effective for a virus that the vast majority of people recover from with no issues.
If the government backs down, they can go back to work and the crisis can be somewhat mitigated. However, the government's plan of eliminating the farmers can't be reversed quickly or easily. It would take many months to years to restore the agricultural sector at that point. It is much easier to un-pause something (what is happening now) than to end it and re-build/re-start it.
They are hopefully showing everyone what they are in for if the government follows through with their plan. All before it becomes difficult to reverse like the government's plan would be.
As a final note: The globalists need to have a digital ID system for everyone before they start creating a food crisis in order to exploit it. Otherwise, how can they control who is allowed to buy food and who isn't. If they can't control that, then was will happen is a chaotic revolution, as history has shown to occur in these situations. Since they already control most of the positions of power in many countries, I doubt that they want the typical uncontrolled chaotic revolution which involves replacing people in positions of power.
