Great observation. In Gen 1:27 we read, "Then God said, βLet us make man in our image, after our likeness; and let them have dominion over the fish of the sea, and over the birds of the air, and over the cattle, and over all the earth, and over every creeping thing that creeps upon the earth.β
God used the the word 'us', which is indicative of the triune nature of God. Exactly what does that statement include where it says "our image, after out likeness? Adam and Eve were created in that way. When Adam sinned, he was changed from the original creation. We are all descendants of the fallen Adam.
Many, many books have been written about this subject.
Being pedantic, but 'in the image of God' has nothing to do with gender/sex. And while God is pictured in the Bible several times as a bipedal entity, we are not in his image for that reason either.

God is a spirit and no man hath seen him at any time. From Bible
So what image must Man be imitating? I'd suppose the spiritual image and not the physical as it doesn't exist. For as it says God is a spirit.
