Any opinions on whether the premium over spot for silver American Eagles is worth it? Or when it comes down to it, are they all worth the same, whether it's an AE, an Austria Philharmonic or a Canadian Maple Leaf, etc?

The stamp serves as an authenticator of quality. That's why it has a premium over uncoined metal. Unless you can measure the purity yourself (and whoever you are selling to also can), the premium is worth it. If you are in Canada, people will be more skeptical of Austrian coins than the more recognizable maple leafs, but the difference is small and depends entirely on preference and random market factors. If there's a wave of counterfeit (diluted or fake) maple leaf, then that same logic flips the market situation.
