I don't know how good or bad bread really is. It's claimed it is bad because of the carbohydrates, which come from the wheat.
We know that the carbs from e.g. sweet potatoes are very healthy. Which implies that the issue may lie with the carbs and not the bread. If you now consider that industrial farming is an abomination of nature, you might begin to wonder whether industrial wheat is the culprit. And while I don't know if bread in general can be healthy, I know with certainty that organic, well grown wheat (not monoculture) will be vastly healthier than the industrial zero-nutrient garbage.
Similarly, meats are "unhealthy". But the studies never point out that they do research that doesn't factor out the extremely unhealthy life of livestock.
In other words, you are what you eat. Be careful where you source your food from more than about whether or not you're eating keto.
