We have been heading down this path for a few years now. I live in a very remote region of East Tennessee. For a few years, we sold raw milk to people who live in our local community. Got out of the dairy (zero days off) and went into beef. Took a couple of loads of cattle to market, and quickly realized that the only ones making any money off our labor, were the feed lots. So now we pre-sell our cattle to locals. They pay for the animal, we deliver it to the processor, (also local), and they pick up their meat and pay for the processing. The demand for our beef exceeds our ability to produce it, due to using traditional methods, and natural feed stocks. So far, so good.
Same with my SIL ranch.
