Wheat is not a GMO. Many years ago they did create some GM wheat, and when it was eaten by animals. ALL the animals died. So, they did not continue. BUT, the problem with wheat is that it is sprayed with herbice while ripening in the field so that all of it dies at once. Makes harvesting easier. All the herbicide remains on the wheat.
Actually all modern wheat is genetically altered - either by selection or modification at gene level (or both). Originally, wheat was much shorter, making it more difficult to harvest.
I eat bread but only if it's made from Spelt flour - an ancient form of wheat (look it up).
And, yes, you are correct about the chemical sprays that are used to protect and to ripen the crop rapidly. Glyphosate is a favorite.
