Actually all modern wheat is genetically altered - either by selection or modification at gene level (or both). Originally, wheat was much shorter, making it more difficult to harvest.

I eat bread but only if it's made from Spelt flour - an ancient form of wheat (look it up).

And, yes, you are correct about the chemical sprays that are used to protect and to ripen the crop rapidly. Glyphosate is a favorite.
