I bought me a nice, big dehydrator a couple of years ago. I dried everything I could get my hands on. Used to can quite a bit but dehydrating is so easy and takes up less storage space. Canning reminds me so much of my late mother, though. So many days in her kitchen when I was a kid helping her can tomatoes, green beans and making homemade preserves.
