It's all sand, so a trench would have been dug out then a form would have been put in place and brick formed over the top of the form. When dry the form would have been broken down and moved to build the next in the line. As the tunnel moved along the completed tunnel would be buried. My guess is a drainage tunnel, a map of its layout would clear things up.
