White pies are usually made with ricotta cheese and no sauce.
Sfincione is tomato sauce topped with grated cheese and breadcrumbs. It's good. Some folks add onion and anchovy.
I took some friends out for Grandma Pizza the other day and they all loved it. It's a style that started on Long Island and I think it will catch on. Square pie, but thinner than a Sicilian. The place I like does a thick cooked tomato sauce on a cracker thin crust.
