A book called Fiat Food out there. I heard the guy on a podcast on THC. When they realized Americans weren't going to be able to afford heathy foods because of inflation they started promoting corn and seed oils and low fat diets. They realized a hungry population would rebel so it was better to change the diet. I think it was during Nixon's time that this started.
