What i can't seem to understand is are some seed oils ok. For example, olive oil, is this ok cause the Mediterraneans swim in this stuff from olive oils as a dip. Correct me if I am gravely mistaken but the Mediterranean diet is healthier then others. So is it a matter of quality and if it is heated or not?
Alot of confusion for me on this topic. I have olive oil for general stuff while cooking. But I use more beef tallow and butter. My kids don't like beef tallow, but they like butter.

Oils like avocado and olive come from the FLESH of the fruit, not the seed.
