That's the William Tell Overture. Tell being the guy who was forced to shoot the apple off his sons head, ended up killing the tyrant and starting a revolution, the New Swiss Confederation started on new years day.
The shooting an apple of the head is retold in the Robin Hood story, similarly fighting a corrupt embezzeling tyrant.
