My fiance's elderly mother just got the first shot yesterday. I was horrified, I'm just praying she doesn't have a reaction to it, I don't know if he can talk her out of taking the second one, as other family members are convinced they are protecting her, he will be absolutely devastated if she dies.

Try to delay, point to changing recommendations from CDC that delaying the second shot is safer, give it at least a month or two before considering the second shot, and observe other elderly around who got it.
