Type 1’s would still need insulin. We produce zero insulin at all, which is needed to maintain blood sugars. The difference between Type 1 and 2 is that Type 2’s usually still produce a little bit of insulin when diagnosed, which is why they could control it via diet, Type 1s don’t have that luxury.
