One big reason for the massive spike in wheat allergies is the fact that they started using glyphosate during the drying process. Glyphosate is the main ingredient in RoundUp.
So basically, every time you eat anything with conventionally grown (non organic) wheat (bread, tortillas, cakes, muffins, etc), you are consuming trace amounts of pesticide, which triggers an immune reaction and systemic inflammation.
Soy is almost 100% genetically modified, and those modifications have been shown to transfer to gut bacteria, making your own genes start doing crazy shit like making you resistant to antibiotics.
Gotta read labels and AVOID ALL GMOs AND CHEMICAL INGREDIENTS.

The big problem with wheat is that we're using a completely different species of plant. There is very little resemblance between current wheat and wheat of 100 years ago.
Avoiding wheat 100% is a good thing.
That, too! Once I stopped eating wheat about ten years ago all my horrid allergies went away. UNtil this year. The cedar got me at last.
Yep. Soy sauce, tofu, tempeh and miso, I believe. But ONLY ORGANIC.
