You gotta remember though mt doom was heavily guarded. When Frodo destroyed the ring the eye was destroyed and the armies of Mordor quickly fell apart. The whole reason Frodo and Sam were chosen was because they could easily slip through defenses and werent as corruptible as men were. The eye was searching for the ring the entire time, if Gandalf sent the eagles to deliver the ring they would have been spotted immediately.
Can we just skip to the eagles??
The eagles are the rescue mission. If the eagles are sent before the ring is destroyed then it is retreat not rescue.
If the eagles had provided transportation for Frodo and Sam in the first book... the entire adventure would have ended within 2 more chapters.
Eagles fly them to Mount Doom, ring destroyed within 2 hours... problem solved. No journey necessary.
