The control surfaces are usually small, except for the vertical stabilizers on newer fighters, as they seem to be the entire thing. You also don't want to make any large or sudden maneuvers when going so fast as to break the sound barrier.
A "boost" on fighters is technically called the afterburner. it's been a long time and I've forgotten exactly how it works, but it increases acceleration to enable the previous generation of fighters to break the sound barrier. Test pilot Chuck Yeager broke the sound barrier in 1947.
