Their bikes are built as weapons and protection (very heavy and reinforced). They are trained to fight with them in a similar manner to a riot shield, but it doesnt trigger the soy-bois or create optics problems.
Look for videos of phalanx-formation, or when they penetrate and extract targets.
There's some really cool moves where they pin the assailants limbs and joint-lock (or break) them.

I spent the last 8-10 years commuting through down-town Seattle (much via public bus, so lots of time waiting at stops). When I watched them train, and got close-ups of the bikes, the hardware looked much more rugged and sturdy (and built completely differently) than the stuff my friends have been buying. The consumer stuff would just crumple if used tactically like in the videos of the units in action.
I'm not an expert in bikes or cops; all I have is perception. If consumer product could be used in a similar manner with similar results, I find that shocking, but will take your word for it.
