When you eat your body has to process and break down everything you ate. This causes inflammation (the root of all modern health issues). When you fast your body has time to break down everything you ate and also clean out all the cancer cells and other debris that you don't want.
The benefits of intermittent fasting are many. You produce more HGH which keeps you looking young and promotes muscle growth. It reduces your risk of cancer and other serious chronic illnesses. It is also one of the best ways to lose weight or maintain a healthy weight.
Carbs/ grains are actually terrible for you, they don't break down well in our bodies. This is largely due to how much wheat and grains have changed genetically since our ancestors first cultivated them.
This is why Keto/ Paleo diets have really taken off. When you eat mainly fatty meats and veggies and then fast, you are able to enter what is called autophagy. Where your body uses the good fats from the meat for energy. Which doesn't take place when you eat carbs. When you eat carbs your body will use those for energy first and it isn't as efficient.
