She says I have to wear the mask even though I'm off the clock. Meanwhile, she doesn't have to wear the mask herself because she's vaccinated.

Dress code discrimination.

Bring it up with HR. Refuse to wear the mask until an equitable policy is mandated for all employees.

Give them an ultimatum. Either everyone wears the mask, or nobody wears the mask.
