But there are many many ways to use the market to help out a restaurant. Most are just so lazy or set in their ways that all they can think of is hiring more people at low wages to do their work. Mom and Pop stores have this problem quite often.
Most of the time it's gonna take the owner's brain power and elbow grease to negotiate the markets and find cheaper/better supply, figure out better price to demand ratios, and work the hours that aren't being picked up by low wage help.
