Who Is Not Required to Follow These Laws
Many organizations that have health information about you do not have to follow these laws.
Examples of organizations that do not have to follow the Privacy and Security Rules include:
Life insurers
Employers
Workers compensation carriers
Most schools and school districts
Many state agencies like child protective service agencies
Most law enforcement agencies
Many municipal offices
I'm not a lawyer, but you will have to decide how much your job is worth to you. I know that many people here will tell you never get the jab no matter what, but not me. The vaccine is a risk, and if you are under 60, much more risk than the virus. But it is still a decision that you have to make. I personally will never accept the jab, but I don't really need my job.

Employers face lawsuits from people that don't want to be vaccinated, but they also face lawsuits from vaccinated that get Covid-19 and will sue their employer for not implementing a vax-only workplace.
So it all comes down to your choice. You can refuse to say and maybe get fired. You can tell them that you will never get the jab and maybe be fired. You can tell them that you will consider getting the vaccine when an FDA approved one is available (which it is not due to the clever little shell game that the FDA played with Pfizer).
Or you can wait and see and only get the jab if they require it and hope for the best. It is your choice. I don't think it is obvious what the right action is. It depends so much how much you like your job.
