It depends on how well bled out it is more so than being killed while suffering.
Gunshot game does not taste good because it dies immediately and does not bleed out, you are tasting blood soaked meat. There is no suffering when shot in the head.
Bowshot game tastes good because you are constantly chasing it and keeping it from bedding down and clotting up. You chase it until it bleeds out. I would imagine this causes a lot of stress.
Yet, I won’t eat gunshot game, but I love bowshot game.
It has less to do with stress or suffering and more to do with blood, those chemicals caused by stress are in the blood anyways, not the meat.
Slaughter houses kill immediately but the animal is hung and cut in a way to bleed out very quickly.
They literally say they slaughter humans the same way they do kosher, so it would be blood full of adrenochrome, and the flesh would still taste good.
But just so you know, the whole theory about stress causing a release of chemicals like adrenaline in the blood that end up making your meat tasting worse IS true, it's just also that blood will always make meat taste worse, so it ends up being better to cause stress in order to remove blood than vise-versa.
I also imagine that, naturally, animals are in a constant state of stress from just survival instinct, so what we would think of as "scaring" an animal probably honestly isn't that much more stressful for it than everything else that scares them in normal life.
