Except it's not that weird. The snake on a stick in this case is the Rod of Asclepius, which represents an old greek god of medicine and healing was used as a symbol for the medical practice in general since then, just like a red or green cross with four equally sized arms is an international symbol for recognizing medics, hospitals and medicine storage spaces.
It was originally a cult symbol

I have not seen any credible evidence to suggest that its ever become anything other than a cult symbol.

The snake was also a symbol for wisdom:
