My thought is the clot-shot fallout isn't going to all hit at once. Once it starts to hit, people will start getting desperate and businesses will hire non-GMO people again just to get anything done.
As the situation gets more desperate the non-GMO will be recognized as the only reliable source of labor and will get drafted (mostly by sheer money and emergency need) into whatever critical job of the moment there is. Ones with special education and training will get drafted into the really critical roles like working at a powerplant while others will be truck drivers. Either way, we will get paid a lot but be worked extremely hard to keep this country afloat.
This will be pushed at the state and county level and also by businesses desperate to get necessary supplies.
