If you file for a religious exemption before they fire you, then you have a 1st amendment violation. That changes up the game even in those states - I live in Ohio, which is at-will, so I can be fired for no reason at all as well. But fortunately, Ohio's unemployment system recognizes when people are fired without cause and I have won 2 such battles where shitty employers fired me for no reason (made up reasons, actually), and tried to fight my unemployment claim. They lost. We're not without any recourse on this.
I have experienced it in NC, studied it in a law class, and worked at a law firm. I tried to get unemployment from a job I was fired from back in the 70s. I was given no reason. At the hearing, a manager came in and lied about me. It was my word against hers, and I lost. So I got a similar job the next week at a higher rate of pay.
