I'd say even with the linux distros people are using on their phones it's still not good enough. Unless you understand the kernel and device drivers intimately you're placing a ton of trust into the software to be doing what it says it's doing.
Example is green light that shows your camera is active is controlled in software. There's zero reason your camera cannot be recording and ALSO not illuminate the green light saying it's recording.
I'm not suggesting that Apple is "ok", what I am suggesting is that using google for anything at this point is for "special folks."

Not to mention Android is linux and many Linux kernel devs are Google employees.
Of course that being said, countries like China where Google is banned manage to degoogleify their stuff.
