Iodized salt is amazing. Animal fats are amazing. Eggs are amazing. Added nitrates in some bacon is bad- don’t eat those- but it’s easy now to find sea salt or celery salt bacon now.
Processed food is crap and added sugar is what causes most of high cholesterol. 80% of the cholesterol in your body is produced by your liver. Sugar and high glycemic foods like simple carbs in bleached wheat instruct your liver to produce excess cholesterol. Turn off the added sugar and high glycemic foods and you turn off excess cholesterol production.
I dropped my LDL From 189 to 46 and Triglycerides from 178 to 83, in 40 days doing this with a Daniel Fast of fruits, nuts and vegetables. And further dropped LDL to 40 and Triglycerides to 76 and raised HDL to 41 from 38 on a high fat diet with no added sugars and no simple carbs. My total Cholesterol on my last blood test was down to 97, down from 262 that led to a heart blockage.
nitrates in bacon or cured meats is no issue at all if you get outdoors and get plenty of sun.

eat your bacon and eggs breakfast out in the sun, or salamis, cheese and red wine lunch out on a nice sunny day, enjoy life and don't worry about it.
also notice that study points out added nitrates increase nitric oxide (NO) metabolite production, which UV-A light also produces in the skin. This has direct bearing on the building of innate immunity... so that nitrate-added bacon is protective against the Coof if you can believe that.
but if you're still worried, then get slabs of raw pork belly, season and crispify those. epic health food.
Thanks for the direction on Nitrates! I am nearing a decade and a half from my time as an elite athlete so I’ll need to see whether it is the right thing for me.
