You might have misunderstood what mRNA is.
mRNA is a set of instructions to make a protein in the cell ribosome. Any protein really, the mRNA tech is the ability to make instructions to make a protein. That's what the tech does, but you have to know the sequence of the protein you are making, you have to design the protein first. mRNA doesn't do that bit, it is just instructions to make the protein you know the design of.
The design of a spike protein cannot determined with mRNA tech, it is designed using (as part of the process) natural selection of viruses in hosts (Gain of function) The spike protein is designed on a virus.
