Serious question: have you ever made tuna paddies a.k.a. crabby patties? If not then you absolutely should because they are delicious in the summer months.
Boil some diced potatoes and mash them. Combine mashed canned chick-peas, lots of grated carrot, some peas and corn if you want, lots of ginger powder, garlic powder, vegetable stock powder, salt, pepper, coriander, cumin, black pepper and chili powder. Mash it altogether and fold in some canned tuna, form into paddies, coat in flour, egg wash and breadcrumbs and fry.
Use a LOT of ginger. Trust me because it just works!
They freeze perfectly and can be thawed and crisped up in the oven or fried again if you're not counting calories. Serve with salsa and green feta salad. Perfection!.
...that would beat the heck out of a "bread sandwich"...howls...
...and I am not waiting until summer to try that recipe, thank you...winks....
