Wow, rooftop, you know all the things!! 🥰 Thanks for all the info you provided on my various comments! I find it all extremely fascinating and helpful!! I’m definitely going to try using beef fat instead of vegetable oil for our roux. I’ll just make a small batch of gumbo and do all the shortcuts my husband wouldn’t normally do, that way if it doesn’t turn out the way it should, it’s no huge loss of time or ingredients. Thanks again! ❤️
