Even without the 3-letter agency forensic tampering, with photorec you could retrieve quite a lot of date previously held on a device ..... It does take a hell of a lot of time. And some things are only partially retrievable (SSD)

I was just a sucker who backed-up his shit too late and had to resort to photorec.
