I work on Navy jet engines for a living. It's total bullshit that they wouldn't be able to find them. The most plausible thing is the engines weren't there in the first place. I believe in the disguised weapon as a plane theory, myself.
Have you seen the aerial video of the plane hit? (It's pretty obscure, will try to look for it) Anyway. it strongly appears as though it was a missile with how it accelerates in the final moments.
Side note on OP: That's with the engines roughly scraping the grass, not the wheels down height.

I haven't seen the aerial video, just the ones from the ground and the chopped up, missing frame video from the security shack.
