In that case, all they can do is require you pay the taxes on the actual value of what you received. They can't stop you from taking any form of payment you please.
There is already a parallel economy. It uses silver and gold. You just need to find the people and businesses who participate in it.
We had a gas station that was accepting gold and silver till the town told them they couldn't. They probably still do if you asked quietly.
