An alternative to gmail, simply use another email provider.
Bonus point alternative, purchase a low end vps and also a domain name and host your own email.
youtube:

search engine:
google is still the borg on this one, they have a massive head start in the indexing of the internet. Using other search engines will help improve their indexing over time, and deny google the clicks. Just have to bite the bullet and use them if serious about it.

In terms of search engines, there is no one silver bullet. So having a VPN switching sites often, deleting your cookie/browser history, deploying ublock, invidition, user-agent-spoofer may help in giving the data miners a run for their money.
