I just canned 53 jars of tomatoe sauce today.
Canned 15 chickens yesterday
33 jars of various pickles(bread butter, dill, gherkin) last week
30+ jars of corn, 40+ jars of peas, cellar is full of potatoes, squash, onions, carrots and I’m forgetting everything else. Every year it’s the same routine, I didn’t even notice food prices increasing…. Everyone can do it(pun intended?)
It’s a shitload of work but we can make it without these big plants
Get a Ball book for beginners. I have this one (see link) and refer to it all the time. Been canning for years now but the OP is right- it is a lot of work but not hard. If you have a local cooperative extension there may even be classes.

NO sorry, not everyone can do it. I fought like the dickens to just get lids!
I used to now I use reusable lids
never heard of them. wanna share the info?
I use harvest guard lids but read this first

Do you water can or pressure can? Where did you learn to can? Any suggestions for beginners?
Both and from my mother. I prefer to pressur can as it uses less energy
