I think you're comparing apples and oranges.
Tylenol and other drugs are relatively stable chemical compounds. Tylenol remains Tylenol whether it's 35°F or 105°F.
The mRNA "vaccines" require significant cooling. I believe it's around -40°F, and then just prior to injection they get heated to room temperature otherwise it breaks down.
For "mRNA vaccine" via Lettuce, I think the technical challenge is too high. You have to find a way to infuse a foreign protein (the mRNA) with the Lettuce plant. It has to remain stable at room temperature. It has to survive washing (so no spray on mRNA). Then it has to survive stomach acid AND heating to 98°F until it reaches the intestines where it can then enter the bloodstream.
