For years after I began voting in 1976, machines had buttons or mini levers to pull and then a lever to register the votes - very low tech. After the polls closed, machines would be open with witnesses. The numbers were recorded and called in to the Sec of State. We got results no later than very early the next day.
Point is there is no reason for counting to take days.
