Time to get out in the country and research local beef producers, small farms, I dont know where you live, but if you look and ask around, there are farmers who still raise on the farm, and you can buy a calf, they will raise and feed it, and you arrange the slaughter and butchering. Small dairies ship their bull calves off, but some will let you buy one, you pay for the feed, check up on it a couple of times a week, arrange for the castration, and you can grow a nice steer. There are local farmers who will give you the verbal "I am not suppossed to sell this unregulated, uninspected beef", but if you own the cow, and pay for its feed and butchering, you are not buying beef, but you are buying a live animal and "boarding" it. I buy cheese from a farmer, and we call it barter, I barter with currency, it's not really a "sale" wink wink.
I'm stuck in jersey .. wish there is a cheaper and more practical option here. But that's good to know if I'm able to do that in the future. Thanks!

North. Where is the farm, down south?
Central west. In clinton nj. Father and son. They raise neef cows and sell direct to consumer. I am in the process of raising beef myself but have a whole cow reserved from them for this spring until my cows are big enough
