Can we even trust them? Should I trust my local butchers?

If you live in a rural area, get to know a local rancher and your local farmers markets. I’m fortunate enough to live in a rural area and I can get local beef, chickens, pork, fruit and vegetables.
I'm in the suburbs, but would love to get our own farm one day. We've been eating bison meat lately (maybe bison is still safe from mRna?) .. it's $8/lb at my local supermarket..very pricey. Perhaps we'll try to eat wild caught fishes more often to replace beef if it comes to that.
Most cost-effective thing to do is get a box freezer and buy a quarter or half cow, or bison if you prefer. You can get a variety of all cuts of meat for about the same price as ground meat, and you can usually get bones and offal tossed in free. Bones are generally meaty, great stew, and the bone broth is the healthiest thing you could imagine. Have some and freeze the rest in sturdy zip bags.
