Where do you live? I live in northeastern NC, and the local grocery store had plenty of eggs. In fact there was a whole pallet of them sitting near the dairy case. The milk section was full as well. And there were two pallets of milk and milk-related products sitting in front of that case.
Find farmers. My wife looks on all the social media stuff that I won't do, and there are always farmers advertising their farm fresh eggs. If she can't find something we need she goes on a fakebook group for our local neighborhood, or on the marketplace and just asks for stuff. Last time we asked for eggs we had at least 6 farmers in my area respond and I ended up buying 6 dozen eggs. A lot of people raising chickens end up with more eggs than they need and might not even realize they could sell them.
By the way - this isn't just for buying stuff. Our HVAC went out during a very cold spell and we had my infant granddaughter in our house so we obviously needed more heat than the fireplace could provide. Wife asked our neighborhood page if anyone had heaters we could borrow for a few days and ended up with 6 of them.
Truckers hate Denver, can’t get a load out except for heavy Coors loads that don’t pay squat. Then you leave empty to find greener pastures and run into being shut down for days because you’re empty and the 80mpg crosswinds across the plains will cause a rollover. I love Colorado.
So sorry stores are out of so much. Your point is correct. Once they make all of your food they have you trapped. No-one wants to starve or see their neighbors starving.
You might want to move to a place more amenable to growing some of your own food. Most of the eastern half of the US is good for that, so then look at state government and weather.
