Personally I would just avoid it - it isn't that tasty. But if you are compelled to eat it, because of it growing in your garden and you are hungry, for example, harvest it after a frost, or put it in the freezer, and then cook it. Best mixed with potato, cooked in the same pot, and mashed.
Definitely don't eat it raw, you'll only cause digestive issues.
