Sugar is one of the most addictive substances. Removing water improves sweetness and usually increases flavor. For example, dried meat is higher in glutamic acid concentration than grilled meat.
I have to agree with you, though. Fresh pineapple (depending on ripeness) is king. I have never noticed inconsistency in dried pineapple. It is all very sweet.

Strangely enough (or maybe not) I don't think I've ever eaten dried pineapple before and I quite enjoy pineapple.
Fresh is great, grilled is my favorite, and dried is like candy. The water evaporates but not the sugar
