Sugar is one of the most addictive substances. Removing water improves sweetness and usually increases flavor. For example, dried meat is higher in glutamic acid concentration than grilled meat.
I have to agree with you, though. Fresh pineapple (depending on ripeness) is king. I have never noticed inconsistency in dried pineapple. It is all very sweet.
