I'm not hip on this doctor. To me, he's soft-balling this topic and tends to be deceptive. Yes, I don't doubt the FDA sucks in all too many ways, But, did you notice him saying the rest of the world eats crickets, and Mexico too? WTH? So, he's saying in this sense -- "Come on America get with it. It's coming to a table near you." He inflates and mitigates to conceal his argument.
He did mention the health issue concerns, but he put it terms of shell fish. How many people are allergic to shell fish though? He really told only part of the story here. The fibrous exoskeleton of insects is called 'chitin'. It is the same material that all exoskeletal creatures have, including shellfish. But, people aren't eating the shells of shellfish or the shells of lobsters. That's a big difference. Chitin is similar to cellulose and is undigestible to the human body. Instead, the doctor conflates the push to eat insects with the FDA lacks enforcement. This isn't the central thesis at all. In Illinois they're building a 1.5 billion dollar cricket factory to make cricket meal...... Also one third of crickets are infested with parasites. He conveniently left didn't mention that fact either.
